Fillets vary in size. Roughly, Salmon Fillets Sashimi Grade are 150-250g each.
We get them within 1 week of them being caught and they are frozen to keep fresh. Filleted, frozen and vacuum sealed right from capture.
We take the same rigorous precautions when sourcing fish. They're handled with care and we monitor the transport. The price differences are a matter of economics, not of quality. Fish are sourced from sustainable fisheries, with no preservatives or chemicals, and we're happy to say that they're equally fresh.
